L' Antico Ristorante Panson è un tempio della cucina genovese che vanta un passato di illustri frequentazioni.
Panson, ovvero il pancione, deriva dal nome dedicato ad un oste che anticamente vi operava. 
Il ristorante si trova in un grande palazzo rinascimentale. Il locale è gradevole e curato, all'interno si articola in salette, una delle quali è intitolata in onore dell'Ammiraglio Nelson, che fu qui per un incontro segreto con Lady Hamilton.
A disposizione 75 coperti, in un ambiente classico ed elegante. Inoltre dispone di un bellissimo dehor sulla storica Piazza Erbe, capace di catturare il gusto in una suggestiva cornice di palazzi storici che circondano la piazza.
Il ristorante opera infatti dal 1790, a pochi passi dal Palazzo Ducale e dalla casa natale di Cristoforo Colombo, in pieno centro storico.
Il fiore all'occhiello del ristorante è rappresentato dai piatti a base di pesce, rigorosamente freschissimo: antipasti, zuppe, primi piatti, grigliate e fritture.
Tutti i primi piatti sono preparati con pasta fatta in casa: sapori del passato che arricchiscono le più moderne ricette.

The restaurant is located in a large Renaissance palace. The restaurant is pleasant and well-kept, inside it is divided into small rooms, one of which is named in honor of Admiral Nelson, who was here for a secret meeting with Lady Hamilton.
75 seats are available, in a classic and elegant setting. It also has a beautiful outdoor area on the historic Piazza Erbe, capable of capturing the taste in a suggestive setting of historic buildings that surround the square.
In fact, the restaurant has been operating since 1790, a few steps from the Palazzo Ducale and the birthplace of Christopher Columbus, in the historic center.
